  • 2 1/2 pounds parsnips
  • 2 ounces butter (or 2 ounces bacon fat)
  • 3 tablespoons stock
  • Salt and pepper
  • Nutmeg, 1 pinch

How to Make

  • Step 1: Pre-heat oven to 375°F (or whichever temperature you need to cook your meat).

  • Step 2: Peel parsnips, quarter, and remove any woody core.

  • Step 3: Parboil for 15 minutes.

  • Step 4: Place in an ovenproof dish. Add stock and sprinkle with salt, pepper and nutmeg. Dot with butter and bake for 30 minutes on a low shelf in a moderate oven
