Step 1: Preheat the oven to 400°F.
Step 2: Heat the olive oil in a large saute pan over high heat.
Step 3: When the oil begins to smoke, add the carrots and cook, stirring frequently, until the carrots begin to brown, about 5 minutes.
Step 4: Sprinkle with the cumin and coriander, and stir.
Step 5: Deglaze the pan with the lemon juice.
Step 6: Scrape the carrots into an 8-inch-square baking dish, add the water and cover with foil.
Step 7: Transfer to the oven and cook until tender, about 20 minutes.
Step 8: Remove carrots from the oven.
Step 9: Drain any water that remains.
Step 10: Sprinkle on the mint, season with salt and pepper to taste and serve.
