Ingredients

The ingredients are:
  • 1 tablespoon olive oil (extra-virgin)
  • 1 pound carrots, halved (baby carrots, lengthwise)
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 2 tablespoons lemon juice
  • 1/2 cup water
  • 1/4 cup chopped mint
  • Salt and pepper, to taste

How to Make

  • Step 1: Preheat the oven to 400°F.

  • Step 2: Heat the olive oil in a large saute pan over high heat.

  • Step 3: When the oil begins to smoke, add the carrots and cook, stirring frequently, until the carrots begin to brown, about 5 minutes.

  • Step 4: Sprinkle with the cumin and coriander, and stir.

  • Step 5: Deglaze the pan with the lemon juice.

  • Step 6: Scrape the carrots into an 8-inch-square baking dish, add the water and cover with foil.

  • Step 7: Transfer to the oven and cook until tender, about 20 minutes.

  • Step 8: Remove carrots from the oven.

  • Step 9: Drain any water that remains.

  • Step 10: Sprinkle on the mint, season with salt and pepper to taste and serve.
