Ingredients

The ingredients are:
  • 3/4 cup macadamia nuts (unsalted)
  • 1 1/2 cups self-rising flour
  • 3/4 cup firmly packed brown sugar
  • 1 cup mashed banana
  • 2 large eggs (lightly whisked)
  • 125 grams butter, melted (plus extra to serve)

How to Make

  • Step 1: Preheat oven to 180C/160C fan forced.

  • Step 2: Grease and line a 21cm x 11cm (base measurement) loaf pan with baking paper.

  • Step 3: Roughly chop macadamias, reserving 1/4 cup for the top of the cake.

  • Step 4: Sift flour into a bowl and add the chopped macadamias, sugar, banana, egg and melted butter and stir until well combined.

  • Step 5: Spoon mixture into loaf pan, level surface and sprinkle top with the reserved macadamias and bake for 45 minutes or until a skewer inserted at the centre comes our clean.

  • Step 6: Stand in the pan for 10 minutes and then turn out onto a wire rack to cool.

  • Step 7: Serve with butter to spread onto the slice.
