Step 1: Cook pasta in a saucepan of boiling salted water for 8 minutes or until tender and then drain and RESERVE 1/2 cup of the cooking liquid.
Step 2: Melt butter in a frying pan over moderate heat and add bacon, cook and stir for 3 minutes or until bacon is crisp and then add capers and zest and cook and stir for 30 seconds or until fragrant.
Step 3: Add the pasta, reserved cooking liquid, juice, tomatoes, sour cream and spinach and toss to combine and sprinkle with parmesan.
