Ingredients

The ingredients are:
  • 500 grams dry angel hair pasta
  • 40 grams butter
  • 90 grams bacon (3 rashers), rind removed and thinly sliced
  • 2 tablespoons capers, rinsed
  • 1 lemon, whole (zest finely grated and juiced)
  • 1/2 cup tomatoes, chopped (semi-dried tomatoes, drained and coarsely chopped)
  • 300 ml low-fat sour cream
  • 50 grams spinach leaves (baby)
  • 1/4 cup Parmesan cheese, freshly grated (to serve)

How to Make

  • Step 1: Cook pasta in a saucepan of boiling salted water for 8 minutes or until tender and then drain and RESERVE 1/2 cup of the cooking liquid.

  • Step 2: Melt butter in a frying pan over moderate heat and add bacon, cook and stir for 3 minutes or until bacon is crisp and then add capers and zest and cook and stir for 30 seconds or until fragrant.

  • Step 3: Add the pasta, reserved cooking liquid, juice, tomatoes, sour cream and spinach and toss to combine and sprinkle with parmesan.
