Ingredients

The ingredients are:
  • 1 1/3 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup shortening (golden)
  • 1/3 cup brown sugar, packed
  • 1/3 cup granulated sugar
  • 3/4 cup dried fruit (tropical blend mixed dried fruit bits)
  • 1/2 cup coconut
  • 1/2 cup chopped macadamia nuts (or almonds)

How to Make

  • Step 1: In a medium mixing bowl, combine flour, baking powder, baking soda, ginger, and salt. Use a pastry blender to cut in shortening till mixture resembles coarse crumbs

  • Step 2: In a clean 1-quart glass canning jar, layer in order, brown sugar, sugar, fruit bits, flour mixture, coconut, and nuts.

  • Step 3: Seal and attach instructions

  • Step 4: Baking directions: Preheat oven to 375. Empty contents of jar into mixing bowl and stir to combine. In a small bowl combine 1 egg, 2 tablespoons pineapple juice or milk, and 1/2 teaspoon vanilla. Add to flour mixture and stir till well combined. Drop by rounded spoonful onto ungreased cookie sheet. Bake 9 to 10 minutes or until just lightly browned. Transfer cookies to a wire rack and let cool
