Ingredients

The ingredients are:
  • 2 tablespoons honey
  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 tablespoons red wine vinegar
  • 1 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 1 1/2 pounds salmon fillets (cut into 4-6 pieces -- mine was cut into 6 pieces)
  • 2 tablespoons olive oil
  • 4 ounces yellow onion (1/2 onion, chopped)
  • 3 cups zucchini, diced (2 zucchini, halved lengthwise and then cut into 1/4 inch pieces)
  • 1 to 2 tablespoons parsley, chopped

How to Make

  • Step 1: Place a rimmed baking sheet in oven and then preheat the oven to broil (high) but keep pan in oven as oven preheats.

  • Step 2: In a micro-safe bowl combine the honey, mustard, vinegar, 3/4 teaspoon pepper and 1/4 teaspoon salt. Microwave on high for 2 minutes, stirring after one minute.

  • Step 3: Remove pan from oven and coat it with cooking spray.

  • Step 4: Arrange fillets, skin side down, on pan and broil for 6 minutes, brush with honey mixture; broil 2 minutes or until done and brush with more of the honey mixture.

  • Step 5: While fish is cooking, heat the oil in a skillet over high heat. Add the zucchini and onions -- may need to cook in two batches--for 3-5 minutes and then add remaining salt and pepper and parsley to mixture, toss.

  • Step 6: Serve zucchini with salmon.
