Step 1: Pat cherries with paper towels to remove excess moisture and set aside.
Step 2: In a large bowl, cream butter and brown sugar until light and fluffy.
Step 3: Beat in cherry juice and vanilla.
Step 4: Combine flour and salt; gradually add to creamed mixture and mix well.
Step 5: Cover and refrigerate for 1 hour or until dough is easy to handle.
Step 6: Insert a chocolate chip into each maraschino cherry.
Step 7: Wrap a tablespoon of dough around each cherry.
Step 8: Place 1 in. apart on ungreased baking sheets.
Step 9: Bake at 350° for 15-17 minutes or until set and edges are lightly browned. Remove to wire racks to cool.
Step 10: In a small bowl, melt chocolate chips and shortening, stir till smooth
Step 11: Dip tops of cookies in melted chocolate and let stand till set
