Step 1: With a sharp knife score oranges into quarters and gently remove the peel with your fingers
Step 2: Heat orange peel with 6 cups water to boiling. Let simmer 30 minutes. Repeat with another 6 cups water
Step 3: With a spoon gently scrape off remaining white membrane from peel
Step 4: Cut peel lengthwise into 1/4-inch strips
Step 5: Heat 2 cups sugar with one cup water to boiling. Stir till sugar is disolved
Step 6: Add peel and let simmer 45 minutes, stirring frequently
Step 7: Use a strainer to thoroughly drain orange peels
Step 8: Roll peels in 1 1/2 cups sugar and spread on waxed paper to dry
