Step 1: Lightly butter baking sheet, 15 1/2 x 12 inches.
Step 2: Arrange lollipop sticks on baking sheet.
Step 3: Combine butter, corn syrup and sugar in a large saucepan.
Step 4: Heat to boiling over medium-high heat, stirring occasionally.
Step 5: Reduce heat to medium and continue to cook, stirring frequently till temperature reads 270 on a candy thermometer.
Step 6: Add in coloring if desired.
Step 7: Drop mixture by tablespoonfuls over end of each lollipop stick.
Step 8: If desires, while lollipops are still hot, they can be decorated with sprinkles.
Step 9: Cool thoroughly before removing from baking sheet.
