  • 2 tablespoons butter

How to Make

  • Step 1: Lightly butter a sheet of aluminum foil.

  • Step 2: Combine sugars, cream, and salt in a large saucepan.

  • Step 3: Cook over medium heat, stirring constantly, until temperature reaches 228 on a candy thermometer.

  • Step 4: Stir in butter and pecans.

  • Step 5: Continue cooking, stirring constantly, until 236 on candy thermometer.

  • Step 6: Remove from heat and let cool 5 minutes.

  • Step 7: Beat mixture with wooden spoon until slightly thickened. Candy should coat nuts, but not loose gloss.

  • Step 8: Drop candy by large spoonfuls onto foil and let set.
