Ingredients

The ingredients are:
  • 1 cup honey
  • 3/4 cup brown sugar, packed
  • 1 egg
  • 1 teaspoon grated lemon peel
  • 1 tablespoon lemon juice
  • 2 1/4 cup flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon baking soda
  • Candied cherries and blanched almond half for decorations

How to Make

  • Step 1: Place honey in a saucepan and heat to boiling

  • Step 2: Cool thoroughly

  • Step 3: Stir in sugar, eggs, lemon peel and lemon juice

  • Step 4: Mix in remaining ingredients

  • Step 5: Cover and chill 8 hours

  • Step 6: Heat oven to 400

  • Step 7: Roll small portion of dough at a time to 1/4 inch thick, keeping remaining dough chilled

  • Step 8: Cut dough into 2 inch circles, rounding up the center a bit, and place 1 inch apart on greased baking sheet

  • Step 9: Decorate cookies by placing almond halves around cookie, like spokes, and a candied cherry in the center

  • Step 10: Bake 10 to 12 minutes or until no imprint remains when touched lightly

  • Step 11: To make glaze, heat sugar and water in a small saucepan. Cook till candy thermometer reads 230. Remove from heat and stir in icing sugar

  • Step 12: Brush glaze over cookies
