  • 3/4 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla or 1/2 teaspoon lemon extract
  • 2 1/2 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 48 chocolate mint patties

How to Make

  • Step 1: Thoroughly mix shortening, sugar, eggs and flavoring

  • Step 2: Blend in flour

  • Step 3: Cover and chill dough at least 1 hour

  • Step 4: Heat oven to 400

  • Step 5: Roll dough 1/8 inch thick on lightly floured surface.

  • Step 6: Cut into desired shapes and place on ungreased baking sheet

  • Step 7: Bake 6-8 minutes or until very lightly browned

  • Step 8: While warm, place peppermint patty on each cookie, and when soft, spread to almost the edge of the cookie
