Step 1: In a large pot over medium heat add rice and cook 5 minutes. Add onion and cook until onion is tender, about 3-4 minutes. Add garlic and cook 1 additional minute.
Step 2: Add the remaining ingredients, bring to a boil. Reduce heat to a low-boil, cover and simmer until rice is tender and most of the liquid is absorbed, about 20 minutes.
Step 3: Fluff with a fork and serve. If desired, garnish with chopped cilantro.
