Ingredients

The ingredients are:
  • 1 1/2 tablespoons olive oil
  • 2 red (8 ounce) onions, cut into 1/3 inch rounds
  • 3 1/2 tablespoons red wine vinegar
  • 4 ounces arugula leaves (trimmed, 6 cups)
  • 3/4 cup mayonnaise
  • 8 ounces sliced bread (8 slices, cut 1/2 inch thick or 4 ciabatta rolls cut in half horizontally)
  • 12 ounces smoked turkey (thinly sliced)
  • 3 ounces blue cheese (crumbled, 3/4 cup)

How to Make

  • Step 1: In a skillet over medium high heat heat the oil and add the onions and saute until soft and lightly browned, breaking up the rings (8-10 minutes). Remove from heat and stir in vinegar and season to taste with salt and pepper.

  • Step 2: Chop enough arugula to measure 1 cup; place in a bowl and mix in mayonnaise and season with salt and pepper.

  • Step 3: Spread 1 1/2 tablespoons of the arugula mayonnaise over each cut side of bread. Divide turkey among 4 bread slices, top with crumbled blue cheese and top with red onions and then whole arugula leaves and bread.
