Step 1: In a skillet over medium high heat heat the oil and add the onions and saute until soft and lightly browned, breaking up the rings (8-10 minutes). Remove from heat and stir in vinegar and season to taste with salt and pepper.
Step 2: Chop enough arugula to measure 1 cup; place in a bowl and mix in mayonnaise and season with salt and pepper.
Step 3: Spread 1 1/2 tablespoons of the arugula mayonnaise over each cut side of bread. Divide turkey among 4 bread slices, top with crumbled blue cheese and top with red onions and then whole arugula leaves and bread.
