Ingredients

The ingredients are:
  • 1/4 cup butter
  • 1/4 cup icing sugar
  • 1 egg yolk
  • 1/2 cup all-purpose flour
  • 1/2 cup red currant jam (softened, or raspberry jelly)
  • FOR TOPPING
  • 1 egg white
  • 1/4 teaspoon cinnamon
  • 1/4 cup granulated sugar
  • 1/2 cup filberts, finely chopped

How to Make

  • Step 1: Heat oven to 350.

  • Step 2: Mix butter, sugar and egg yolk. Mix in flour. Press evenly into the bottom of a square 8x8x2 inch baking pan.

  • Step 3: Bake 10 minutes.

  • Step 4: Spread with jelly.

  • Step 5: To make topping, beat egg white until foamy. Add cinnamon and sugar, beating till stiff and glossy. Fold in filberts

  • Step 6: Spread topping over jam.

  • Step 7: Bake 20 minutes or until topping is golden brown.

  • Step 8: Cool slightly and cut into bars.
