Ingredients

The ingredients are:
  • 400 grams dry fettuccine pasta (or other pasta)
  • 2 tablespoon butter
  • 250 grams mushrooms (button, sliced)
  • 2 cloves garlic, minced
  • 300 grams ham (diced, 2 cups)
  • 1 cup cream
  • 1/2 teaspoon nutmeg, grated (fresh)
  • 2 tablespoon lemon juice
  • 1 cup Parmesan cheese, grated
  • Salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: Cook fettuccine for 2 minutes less than the instructions on the packet.

  • Step 2: While the pasta cooks, heat butter in a heavy pot and cook mushrooms over medium heat until lightly brown (about 5 minutes) and then add garlic and sizzle for a few seconds and then add ham and cream, stirring to lift pan brownings and bring to a simmer.

  • Step 3: Mix in nutmeg, lemon juice, parmesan and salt and pepper to taste.

  • Step 4: Drain past, leaving about 1/4 cup water in the pot and add pasta and reserved past water to the pot with ham sauce and toss over heat for a minute or two to allow the pasta to absorb the flavour.

  • Step 5: To serve, pile into a serving bowl and top with more black pepper.
