Ingredients

The ingredients are:
  • 1/3 cup olive oil (80ml)
  • 20 grams butter
  • 1 shallot finely chopped
  • 1/2 teaspoon chilli flakes (optional)
  • 1/2 teaspoon fennel seeds
  • 1 kilogram shrimp (raw banana prawns, peeled, deveined and tails intact)
  • 4 garlic cloves, finely chopped
  • 1 teaspoon ground paprika
  • 1 lemon, whole (finely grated zest and juiced)
  • 2 tablespoon parsley, chopped
  • 4 slices (120 grams) sourdough bread (toasted, 30 grams each slice sourdough Vienna bread)

How to Make

  • Step 1: Heat oil and butter in a large heavy frying pan over medium heat.

  • Step 2: When butter has melted, add shallot, chilli flakes, if using and fennel seeds and cook, stirring often for 2 minutes or until shallot softens.

  • Step 3: Increase heat to medium-high and stir in the prawns, garlic and paprika and sprinkle with salt and pepper and cook, stirring often, for 3 to 4 minutes or until prawns are cooked through.

  • Step 4: Remove from heat and stir in lemon zest, 1 tablespoon lemon juice and parsley.

  • Step 5: Check seasoning and add more salt, pepper or lemon juice if necessary.

  • Step 6: Spoon prawns and sauce onto serving plates and serve with bread.
