Ingredients

  • 6 egg yolks
  • 1 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose (or cake flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup water, cold
  • 2 teaspoons vanilla
  • 1 teaspoon lemon extract
  • 1 teaspoon grated lemon peel
  • 6 egg whites
  • 1/2 teaspoon cream of tartar

How to Make

  • Step 1: Heat oven to 325 degrees.

  • Step 2: In a small mixer, beat egg yolks until very thick and lemon colored.

  • Step 3: Pour yolks into a large mixing bowl and gradually beat in sugar.

  • Step 4: On low speed, add in flour, baking powder and salt, alternating with water, flavorings and lemon peel.

  • Step 5: In another large bowl beat egg whites and cream of tartar until stiff.

  • Step 6: Gently fold batter into egg white mixture.

  • Step 7: Pour into ungreased tube pan.

  • Step 8: Bake 60 to 65 minutes.

  • Step 9: Invert on a funnel and let cool completely.
