Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 2 yellow onions, diced
  • 2 carrots, diced
  • 2 celery rib, sliced
  • 2 garlic cloves, minced
  • 4 sprigs fresh thyme
  • 6 cups beef stock
  • 1 can (800 gram) diced tomatoes
  • 1/2 cup macaroni
  • 1 can (425 gram) borlotti beans (drained)
  • Cabbage, shredded (1/4)
  • 1/4 cup parsley, chopped
  • Grated parmesan and crusty bread or garlic bread, to serve

How to Make

  • Step 1: Heat oil in a large saucepan over medium heat and add onion, carrot, celery, garlic and thyme and cook, stirring occasionally, for 5 minutes and then add stock and tomatoes and bring to the boil and then add macaroni, then cover and simmer for 20 minutes.

  • Step 2: Stir in beans and cabbage and cook for a further 10 minutes.

  • Step 3: Season and stir in half of the parsley.

  • Step 4: Ladle into serving bowls and top with reserved parsley and parmesan and serve with crusty bread or garlic bread.
