Step 1: Preheat a barbecue to medium heat (alternatively these can also be cooked in the oven, preheat oven to 180C and cook for 10 to 15 minutes).
Step 2: Place 20cm x 25cm squares of foil on benchtop and top with sheets of baking paper the same size.
Step 3: Unwrap the cambert and make 5 to 6 slashes in the top of each and insert a few slices of garlic and some of the thyme in each cut and scatter remaining thyme over the top and drizzle with a little oil and season with cracked black pepper.
Step 4: Fold in sides of the foil to form a parcel and seal edges.
Step 5: Place canbert poarcels on the coolest part of the barbecue and cover with a lid or roasting pan and cook for about 8 minutes or until the camembert is soft in the centre.
Step 6: Serve warm with crackers.
