Ingredients

The ingredients are:
  • 160 grams cabbage (3 cups Chinese cabbage, Wombok, finely shredded)
  • 1 carrot, coarsely grated (large carrot)
  • 100 grams snow peas, finely shredded
  • 1 bunch coriander, leaves picked
  • 40 grams cashew nuts (unsalted dry-roasted, roughly chopped)
  • 600 grams cooked shrimp (king prawns, peeled and deveined and tails left intact)
  • 70 grams noodles, fried (Chang's Original specified, or gluten-free noodles)
  • FOR LIME AND CHILLI DRESSING
  • Lime zest (zest of 1/2 large lime)
  • Lime juice (juice of 1 large lime)
  • 2 teaspoons olive oil
  • 1 teaspoon chili flakes, finely chopped
  • 1 teaspoon caster sugar
  • 1/2 teaspoon fish sauce

How to Make

  • Step 1: The make the dressing, put lime zest, juice, oil, chilli, caster sugar and fish sauce in a small bowl and whisk to combine.

  • Step 2: To m make the salad, out cabbage, carrot, snow peas, coriander, cashews and prawns in a large bowl and toss to combine.

  • Step 3: Add the dressing to the salad and toss to combine and then divide salad between shallow serving bowls and sprinkle over fried noodles and serve.
