Step 1: Soak Apple wood chips in cold water for 30 minutes.
Step 2: Preheat barbecue to the temperature of 220°F.
Step 3: Drain apple wood chips and place them on the grill.
Step 4: Coat the apples liberally with the Walnut oil and place them on preheated grill.
Step 5: Cook for about a 1 hour or until apples are deeply browned and soft.
Step 6: Remove from grill and set aside until cool enough to handle.
Step 7: Peel apples and cut into bit size chunks.
Step 8: Combine apples, celery, raisins and walnuts in a bowl.
Step 9: In another smaller bowl combine mayo, yogurt, lime juice and sugar.
Step 10: Pour over apple mixture, mix well and refrigerate for 30 minutes before serving.
