Step 1: Add olive oil to a soup pot and add onion and garlic. Saute till transparent.
Step 2: Add tomatoes and water and bring to a simmer.
Step 3: Add basil and salt and pepper to taste.
Step 4: Simmer at least 20 minutes.
Step 5: To serve, ladle into bowls and garnish with a cream swirl and a sprig of parsley.
