  • 1 red pepper, cut into large pieces
  • 1 yellow pepper, cut into large pieces
  • 1 zucchini, cut into 1/4 inch think slices
  • 1 eggplant, cut into 1/4 inch think slices
  • 1 medium red onion, cut into 1 inch thick chunks
  • 1/3 cup balsamic vinaigrette

How to Make

  • Step 1: Place vegetables in large bowl.

  • Step 2: Add dressing; toss to coat.

  • Step 3: Let stand 20 minutes to marinate, stirring occasionally.

  • Step 4: Remove vegetable mixture from marinade. Reserve marinade for later use.

  • Step 5: Preheat barbecue to medium heat. Place vegetable on grate of barbecue.

  • Step 6: Grill 8 min or until vegetables are crisp tender, turning occasionally.

  • Step 7: Place vegetable mixture in large bowl. Add reserved marinade, toss lightly.
