Step 1: Combine sugar, salt, shortening, and boiling water in a saucepan.
Step 2: Mix and bring to a rapid boil.
Step 3: Add flour all at once and mix and cook until thickened, stirring constantly.
Step 4: Remove from heat. Add eggs one at a time, beating thoroughly after each addition.
Step 5: Add vanilla extract.
Step 6: Force mixture through pastry tube onto greased paper, forming circles.
Step 7: Heat deep fat to 375 degrees F on frying thermometer.
Step 8: Carefully turn paper upside down so crullers will drop into fat.
Step 9: Fry and flip over until golden brown.
