Ingredients

The ingredients are:
  • 8 ounces crabmeat
  • 1 cup potato, diced (cooked)
  • 4 green onions, thinly sliced (cleaned)
  • 1 1/2 cups mayonnaise
  • Salt
  • Pepper
  • 1/2 cup breadcrumbs
  • 1 teaspoon orange zest
  • 1/4 cup orange juice concentrate
  • 1 teaspoon lemon juice
  • 2 tablespoons peppermint, finely chopped (fresh mint)
  • 4 tablespoons unsalted butter

How to Make

  • Step 1: In a bowl combine the crab, potato, green onions, ½ cup mayo and season.

  • Step 2: Combine the ingredients and form into 8 patties of equal size.

  • Step 3: Pour the breadcrumbs on a plate and season.

  • Step 4: Dredge the patties in breadcrumbs to coat and set aside. The patties can be made several hours in advance to this point and refrigerated.

  • Step 5: In a bowl combine the remaining 1 cup of mayonnaise, zest, juice concentrate and mint.

  • Step 6: Season and refrigerate until needed. Can be made several hours in advance of serving.

  • Step 7: Fry cakes till golden brown.

  • Step 8: Serve with a dollop of the mayonnaise.
