Ingredients

The ingredients are:
  • 155 grams edamame (frozen soy beans 1 cup, shelled)
  • 6 ounces soba noodles (uncooked)
  • 1 cup snap peas (snow peas, thinly vertically sliced)
  • 2 tablespoons sesame oil (dark)
  • 2 tablespoons rice vinegar
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon miso (yellow)
  • 1 1/2 teaspoons brown sugar
  • 1 1/2 teaspoons grated ginger root (fresh, peeled)
  • 1/4 teaspoon kosher salt
  • 2 cups cabbage (very thinly sliced, red cabbage)
  • 2/3 cup green onions (thinly sliced)
  • 2 carrots, shaved (peeled and shaved into ribbons, large carrots)
  • 1/4 cup cilantro leaves (optional, fresh leaves)

How to Make

  • Step 1: Bring a large saucepan of water to a boil. Add the edamame and soba noodles. Cook 2 minutes.

  • Step 2: Add the snow peas; cook 1 minute or until the noodles are tender. Drain, rinse noodle mixture well with cold water. Drain.

  • Step 3: Combine the oil and the next 6 ingredients in a large bowl. (through salt) Add noodle mixture, cabbage, onions, and carrots; toss gently to combine. Sprinkle with cilantro, if desired.
