Step 1: Bring a large pot of water to a boil.
Step 2: Add salt.
Step 3: Meanwhile, separate broccoli florets from the stalks
Step 4: Add the broccoli to the boiling water and cook until tender but still bright green, about 5 minutes.
Step 5: Remove broccoli with slotted spoon.
Step 6: Add pasta and cook to desired doneness, 8-12 minutes.
Step 7: Drain reserving 1 cup of the pasta water.
Step 8: In a small skillet, heat olive oil over medium heat and add garlic and hot pepper flakes.
Step 9: Saute until garlic is fragrant, about 1 minute.
Step 10: Add drained broccoli.
Step 11: Mix in ricotta cheese and pasta, until sauce is creamy.
Step 12: If sauce is too dry, add as much pasta water as desired to get a creamy consistency.
