Ingredients

The ingredients are:
  • 1 cup buttermilk
  • 2 tablespoons hot sauce (tabasco)
  • 2 cups all-purpose flour
  • 1 cup yellow cornmeal
  • 3 teaspoons kosher salt, divided
  • 1 teaspoon black pepper
  • 1/2 teaspoon ground red pepper (cayenne)
  • Vegetable oil for frying
  • 2 pounds okra (small to medium size, halved lengthwise)

How to Make

  • Step 1: In a shallow dish (or pie pan) whisk together the buttermilk and hot sauce. In another shallow dish whisk together the dry ingredients (flour, cornmeal, 1 1/2 teaspoons salt and the peppers).

  • Step 2: In a large dutch oven pour oil to a depth of 4 inches; heat over medium high heat until a deep fry thermometer registers 350 degrees F.

  • Step 3: Dip okra in buttermilk mixture , allowing excess to drip off and then in flour mixture, shaking off excess.

  • Step 4: Fry in batches until golden brown (3-5 minutes) -- may need to adjust the heat to maintain 350 degrees.

  • Step 5: Remove okra from Dutch oven and let drain on paper towels. Sprinkle with remaining 1 1/2 teaspoons salt. Serve with hot sauce, if desired.
