Ingredients

The ingredients are:
  • 1/4 cup sun-dried tomatoes (bits)
  • 1/2 cup fresh basil leaves (lightly packed)
  • 2 tablespoons parmesan cheese, grated
  • 2 tablespoons nuts, lightly toasted
  • 1 tablespoon olive oil (extra virgin)
  • 1 garlic clove
  • 1/8 teaspoon fresh coarse ground black pepper
  • Salt
  • 16 ounces brie cheese
  • Garlic-flavored croutons, or cracker

How to Make

  • Step 1: Reconstitute tomato bits in hot water about 10 minutes; drain and set aside.

  • Step 2: In bowl of food processor combine tomato bits, basil, cheese, nuts, oil, garlic and pepper.

  • Step 3: Process to form a fine paste; season with salt.

  • Step 4: Cover and refrigerate.

  • Step 5: Bring to room temperature before topping cheese.

  • Step 6: Trim top crust from Brie wheels.

  • Step 7: Cover top of cheese with tomato mixture, dividing equally.

  • Step 8: On baking sheet, bake in 375ºF oven about 5 minutes, just until cheese begins to melt.

  • Step 9: Transfer to serving plates and surround with croutons or crackers.

  • Step 10: Garnish with basil sprigs.

  • Step 11: Serve immediately.
