Ingredients

The ingredients are:
  • 500 grams snapper fish (white boneless skinless fish fillets, chopped)
  • 2 tablespoons red curry paste (Thai)
  • 1 teaspoon lime juice
  • 2 tablespoons chopped coriander leaves
  • 1 tablespoon oil (vegetable or peanut oil)
  • 4 (280 grams) bread buns (split)
  • 1/3 cup chilli sauce (sweet, plus extra to serve)
  • 60 grams pea sprout (snow pea sprouts)
  • 1 cucumber, thinly sliced (Lebanese cucumber)
  • 1 green spring onion, thinly sliced

How to Make

  • Step 1: Combine fish, curry paste, juice and coriander in a food processor and process until combined and using damp hands shape mixture into 4 patties.

  • Step 2: Heat oil in a large frying pan over moderate heat and cook patties for 4 minutes each side or until browned and cooked.

  • Step 3: Place bread roll bases on serving plates and spread with half the sweet chilli sauce and then top with snow pea sprouts, fish patties, cucumber and onion.

  • Step 4: Drizzle with remaining sweet chilli sauce and top with the bread tops and serve with extra sweet chilli sauce.
