Ingredients

The ingredients are:
  • 1 small cauliflower, cut in florets
  • 1/2 pound fresh green beans
  • 1/2 leaf lettuce (or romaine)
  • 4 ounces thinly sliced prosciutto
  • 4 ounces thinly sliced Italian salami
  • 3 or 4 hard-cooked eggs, quartered
  • 4 oz Swiss cheese (or Italian cheese) in strips
  • 12 Cherry tomatoes, halved
  • Garnish: Green pepper rings, Spanish onion rings, marinated artichoke hearts, anchovy fillets (Optional)
  • Dressing:
  • 2/3 cup vegetable or olive oil
  • 1/3 cup red wine vinegar
  • 2 cloves garlic, crushed
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 teaspoon mixed Italian herbs
  • 1 tablespoon finely chopped parsley

How to Make

  • Step 1: Cook cauliflower and green beans separately in boiling salted water just until tender-crisp. Meanwhile, whisk dressing ingredients together

  • Step 2: Drain vegetables, cover with cold water, drain again. Sprinkle generously with some of the dressing, and allow to marinate in refrigerator at least 1/2 hour.

  • Step 3: Line shallow salad bowl or platter with lettuce. Arrange meats, eggs, and cheese in attractive groupings Surrounded by marinated vegetables and tomatoes. Garnish as desired.

  • Step 4: Serve extra dressing separately
