  • 4 large eggs
  • 1 cup brown sugar
  • 1/3 cup oil (canola oil)
  • 1/4 cup honey
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 cup mead (honey wine, or Orange juice)

How to Make

  • Step 1: Preheat oven to 325°F.

  • Step 2: In a large bowl, beat eggs, sugar and oil until pale in color.

  • Step 3: Add honey, and mead. Mix.

  • Step 4: In a second bowl, combine flower, baking soda, baking powder, cinnamon, and ginger.

  • Step 5: One cup at a time, add dry ingredients to wet ingredients.

  • Step 6: Stir until smooth.

  • Step 7: Transfer batter to a greased 10 x 14-inch baking dish.

  • Step 8: Bake for approximately 35 minutes, or until a toothpick inserted into the center comes out dry.

  • Step 9: Let cake cool and cut into honeycomb shapes.

  • Step 10: Drizzle with lavender honey and garnish with fresh lavender flowers, if desired.
