  • 3 tablespoons balsamic vinegar (white)
  • 1 tablespoon shallot, minced
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon paprika (sweet)
  • 1 tablespoon arugula, chopped
  • 1/4 cup olive oil
  • 1 teaspoon salt, to taste
  • 1 cup arugula
  • 1 cup spinach
  • 2 cups lettuce (field greens)
  • 3 oranges, whole (3 navel, sliced)
  • 1 onion, sliced thinly (small red onion)
  • 35 grams pine nuts (4 tablespoons)

How to Make

  • Step 1: To make vinaigrette, combine vinegar, shallots, Dijon mustard, paprika, chopped arugula and olive oil in a small bowl.

  • Step 2: Toss arugula leaves, spinach and field greens.

  • Step 3: Place greens on serving plates, top with orange slices and onion slices. sprinkle each serving with pine nuts and drizzle with dressing.
