Ingredients

The ingredients are:
  • 5 ounces dry long grain rice
  • 6 ounces chicken stock
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1 yellow pepper, sliced
  • 1 red onion, chopped finely (small onion)
  • 1/4 pound chicken breast (cubed, 1 breast)
  • 1/2 pound chorizo sausage (2 sausages, chorizo style, cubed)
  • 1 garlic clove, diced
  • 5 tablespoons white wine
  • 1/4 cup flat leaf parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

How to Make

  • Step 1: In a pan, fry the dry uncooked rice and half of the small onion in a little olive oil until the onion is beginning to soften.

  • Step 2: Add the chicken stock.

  • Step 3: Bring the rice, to the boil, so that it boils hard and produces steam. Turn the heat down and let it simmer so the rice absorbs the liquid.

  • Step 4: Heat some oil in another pan. Add the chopped peppers and the rest of the onion and cook on a medium heat for two minutes.

  • Step 5: Add the chicken and sausage, stirring continuously until thoroughly cooked.

  • Step 6: Add the white wine and cook for another three minutes.

  • Step 7: When the rice is cooked, stir it into the other pan along with the flat leaf parsley and lemon juice.

  • Step 8: Serve immediately.
