Ingredients

The ingredients are:
  • 1/2 cup buttermilk
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 1/2 teaspoons ground cumin
  • 1/4 teaspoon cayenne pepper
  • 2 pounds potatoes (small white-skinned)
  • 1 cup whole kernel corn (cooked, from 1 ear of corn)
  • 1/2 cup yellow onion, chopped
  • 1 can (14 ounce) hearts of palm (drained and each one cut crosswise into 1/3 inch thick rounds)
  • 2 tomatoes, whole (seeded, diced, 1 1/4 cups)
  • 1/2 cup cilantro, chopped
  • 1 avocado, whole (pitted, peeled and chopped)

How to Make

  • Step 1: In a medium bowl whisk dressing ingredients together (buttermilk - cayenne) and set aside.

  • Step 2: In a large pot of boiling salted water cook potatoes until tender (20 minutes); drain and let cool.

  • Step 3: Cut potatoes into 1/2 inch cubes and place in a large bowl; add corn, onion, hearts of palm, tomatoes and cilantro. Drizzle dressing over potato mixture and toss. Season with salt. Stir in avocado.
