The ingredients are:
  • 2 large eggs, separated
  • 1 tablespoon grated yellow onion
  • 1 teaspoon herbs (fresh mixed herbs parsley, thyme, rosemary, etc.)
  • 1/2 cup all-purpose flour (for coating)
  • 1 cup breadcrumbs (crisp breadcrumbs for coating)
  • 1 teaspoon dry mustard
  • 6 ounces cheese (grated, hard strong cheese)
  • 10 ounces fresh breadcrumbs (3 cups)
  • Oil or pork fat, for frying

How to Make

  • Step 1: Mix together the cheese, fresh breadcrumbs, mustard, herbs and onion. Season well with salt and pepper. Add the well-beaten egg-yolks and stir thoroughly.

  • Step 2: Whip up the egg whites until frothy but not stiff; sprinkle flour onto a board and form the mixture into about 20 small sausage shapes, then roll in egg-white, and finally the crisp breadcrumbs. Fry a few at a time in hot oil or fat. Makes about 20.
