Ingredients

The ingredients are:
  • FOR SALAD
  • 1 pint grape tomatoes (or cherry tomatoes, halved)
  • 1 cucumber, thinly sliced into half moons
  • 1 cup kalamata olives (halved)
  • 4 ounces red onion, thin sliced (1/2 onion)
  • 3/4 cup crumbled feta cheese
  • FOR DRESSING
  • 2 tablespoons red wine vinegar
  • Lemon juice (from 1/2 a lemon, not bottled)
  • 1 teaspoon dried oregano
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • Freshly ground black pepper
  • 1/3 cup olive oil (extra-virgin)

How to Make

  • Step 1: In a large bowl, stir together tomatoes, cucumber, olives, and red onion. Gently fold in feta.

  • Step 2: In a small bowl, make dressing: Combine vinegar, lemon juice, oregano garlic and salt. and season with pepper. Slowly add olive oil, whisking to combine.

  • Step 3: Drizzle dressing over salad. Leave the salad sit out at room temperature for 20 minutes before serving or refrigerate until ready to use.
