  • FOR MARINADE
  • 1/3 cup lemon juice
  • 2 tablespoons olive oil
  • 1 red onion, sliced thinly (small onion)
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 2 bay leaves (fresh, crumpled)
  • 10 sage leaves (fresh, torn)
  • FOR LEMON SAUCE
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 tablespoons flat-leaf parsley (fresh, chopped)
  • 3 pounds swordfish (cut into 1 1/4 inch cubes)

How to Make

  • Step 1: Combine the marinade ingredients with some fresh ground black pepper in a bowl. Add the fish, toss to coat with the marinade, then cover and refrigerate for 3 hours, turning the fish occasionally.

  • Step 2: Thread the fish onto 6 metal skewers and cook over a hot grill for 5 minutes, turning and brushing with marinade several times.

  • Step 3: Combine the lemon sauce ingredients in a jar. Seal and shake several times. Serve over the fish.
