  • 3 cups spinach (stems removed)
  • 2 cups parsley
  • 1 cup Parmesan cheese, grated
  • 1/2 cup oil
  • 1/4 cup butter, melted
  • 4 garlic cloves, crushed
  • 1 teaspoon salt
  • 1 teaspoon oil
  • 1 pound dry spaghetti pasta

How to Make

  • Step 1: In a food processor combine first 6 ingredients (-garlic) and puree until smooth; set aside.

  • Step 2: Bring water to a boil in a large pan; add oil and salt and then add the pasta and cook until al dente; strain, reserving 1/3 cup liquid. Blend hot liquid into the puree and toss with the pasta.

  • Step 3: Serve with additional grated cheese.
