Step 1: Preheat oven to 160C/140C fan forced.
Step 2: Heat oil in an ovenproof dish over high heat and cook and turn chicken drumsticks in batches, for 3 minutes or until browned and then transfer to a heatproof plate.
Step 3: Add onion and garlic to dish and cook and stir for 2 minutes or until soft and then add ras el hanout and cook and stir for 30 seconds or until fragrant.
Step 4: Add the water, tomatoes, and potato and bring to the boil and then return chicken to the pan and bake covered for 1 hour or until chicken is tender.
Step 5: Serve chicken with couscous and dates and sprinkle with coriander.
