Ingredients

The ingredients are:
  • 1 tablespoon oil (vegetable or light olive oil)
  • 1 kilogram chicken drumsticks (scored, 8 drumsticks)
  • 2 yellow onions, sliced
  • 1 tablespoon ras el hanout
  • 2 cups water
  • 1 can (400 grams) diced tomatoes
  • 500 grams potatoes (such as desiree, coarsely chopped)
  • 2 cups couscous (prepared couscous, to serve)
  • 1/2 cup dates, pitted (halved)
  • 1/4 cup coriander leaves (to serve)

How to Make

  • Step 1: Preheat oven to 160C/140C fan forced.

  • Step 2: Heat oil in an ovenproof dish over high heat and cook and turn chicken drumsticks in batches, for 3 minutes or until browned and then transfer to a heatproof plate.

  • Step 3: Add onion and garlic to dish and cook and stir for 2 minutes or until soft and then add ras el hanout and cook and stir for 30 seconds or until fragrant.

  • Step 4: Add the water, tomatoes, and potato and bring to the boil and then return chicken to the pan and bake covered for 1 hour or until chicken is tender.

  • Step 5: Serve chicken with couscous and dates and sprinkle with coriander.
