  • 2 pounds tomatoes
  • 2 to 3 tablespoons olive oil (extra virgin)
  • 1/4 teaspoon salt
  • 1/4 cup cheese, crumbled (tangy and crumbly cheese like Cotija or Feta)
  • 2 tablespoons peppermint, finely minced (fresh)
  • 1/4 cup kalamata olives, roughly chopped
  • Extra salt and pepper, to taste
