Ingredients

The ingredients are:
  • 375 gram dry linguine pasta
  • 350 grams broccoli, cut into small florets
  • 1 tablespoon olive oil (extra virgin)
  • 6 green onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 teaspoon lemon rind, finely grated/zested
  • 300 ml cream (light thickened cream, for cooking)
  • 2 tablespoon lemon juice
  • 1 can (415 grams) red salmon (skin and bones removed and flaked into big chunks)
  • 2 tablespoon dill, fresh chopped plus extra to serve

How to Make

  • Step 1: Cook pasta, following packet directions, adding broccoli for the last 3 minutes of cooking time and then drain, reserving 1/3 cup of the cooking liquid.

  • Step 2: Meanwhile, heat oil in a big, deep frying pan over medium heat and add onion, garlic and lemon rind and cook for 2 minutes or until fragrant and then add cream and lemon juice and stir to combine and bring to a simmer.

  • Step 3: Add salmon, dill, reserved cooking liquid and pasta mixture and cook, tossing over low heat for 2 minutes or until heated through and thickened slightly.

  • Step 4: Season with salt and pepper and serve topped with extra dill.
