Ingredients

The ingredients are:
  • 8 ounces dry rigatoni pasta
  • 2 tablespoons olive oil
  • 1 can (14 ounce) diced tomatoes (Italian-style diced tomatoes with juice)
  • 1 container (8 ounce) cream cheese (chive and onion cream cheese)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 1/2 cups shredded mozzarella cheese
  • 1 yellow onion, chopped
  • 1 package (10 ounce) frozen spinach (chopped, squeeze out all the water after thawing)
  • 375 grams cooked chicken breast (cubed, about 3 cups)

How to Make

  • Step 1: Cook the rigatoni according to the package instructions. Drain.

  • Step 2: In an 11×7 baking dish, spread the oil and layer the onions.

  • Step 3: In a preheated oven to 375° bake for 15 minutes and place in a large bowl.

  • Step 4: Press the spinach well between paper towels to drain and add the spinach to the onions.

  • Step 5: Mix in the rigatoni, chicken and the rest of the ingredients except the cheese.

  • Step 6: Place the mixture in the dish and top with the mozzarella cheese.

  • Step 7: Cover and bake for 30 minutes, uncover and bake for 15 additional minutes.
