Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts (cut into 1-inch pieces)
  • 1/2 cup yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups chicken broth
  • 1/2 cup chopped red bell pepper
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon cayenne pepper
  • 2 cans (30 ounces) cannellini beans (drained, 15 ounce each can)
  • 1 can (4.5 ounce) chopped green chiles
  • 1/4 cup chopped fresh cilantro
  • 6 ounces sour cream
  • 1/2 cup green onions, thinly sliced

How to Make

  • Step 1: In a large saucepan, heat oil over medium heat. Cook chicken, onion and garlic 5 to 7 minutes, stirring occasionally, until chicken is no longer pink.

  • Step 2: Stir in remaining ingredients, except cilantro and sour cream. Heat to boiling. Reduce heat; cover and simmer 10 minutes, stirring occasionally.

  • Step 3: Remove from heat; stir in cilantro and sour cream. Serve with green onions sprinkled on top.
