Step 1: In a large stock pot over medium heat, add the olive oil and cook the stew meat and onion until meat is brown.
Step 2: Add the salt, pepper, carrots, celery, thyme, parsley and 2 cups of beef broth.
Step 3: Cover with a lid and simmer for 45 minutes or until meat is tender.
Step 4: Add the water and the rest of broth; turn the heat up to bring to a boil.
Step 5: Add the noodles to the pot and turn heat to medium. Cook until noodles are done.
