Ingredients

The ingredients are:
  • 1 pound stewing beef (cubed beef stew meat)
  • 2 tablespoons oil (olive oil)
  • 1 cup yellow onion, chopped
  • 1 cup celery, sliced
  • 1 cup mini carrots, sliced
  • 4 cups beef broth
  • 1 cup water
  • 8 ounces dry wide egg noodles
  • 1/2 teaspoon salt or more
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon fresh thyme
  • 2 tablespoons fresh parsley
  • 1 bay leaf

How to Make

  • Step 1: In a large stock pot over medium heat, add the olive oil and cook the stew meat and onion until meat is brown.

  • Step 2: Add the salt, pepper, carrots, celery, thyme, parsley and 2 cups of beef broth.

  • Step 3: Cover with a lid and simmer for 45 minutes or until meat is tender.

  • Step 4: Add the water and the rest of broth; turn the heat up to bring to a boil.

  • Step 5: Add the noodles to the pot and turn heat to medium. Cook until noodles are done.
