Step 1: Cover the bottom of a slow cooker with olive oil. Season chicken with salt and pepper. Mix chicken, sausage, bell pepper, onions, garlic, oregano, pepper flakes and tomatoes in slow cooker. Cover; cook on Low heat setting for 6 to 8 hours.
Step 2: Halve and hour before serving, stir artichoke hearts and olives into chicken mixture.
Step 3: About 25 minutes before serving, cook rice in 2 cups of salted water or as directed on package. Drain and season with butter, parsley and Parmesan cheese.
Step 4: Serve chicken over rice.
