Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 3/4 pound chicken thighs, boneless skinless (cut into 1-inch pieces)
  • 1 pound Italian sausage (cut into 1-inch pieces)
  • 1 red bell pepper, chopped (large pepper, 1 1/2 cups)
  • 1 cup yellow onions, chopped
  • 6 garlic cloves (whole)
  • 1 teaspoon oregano, dried
  • 1 teaspoon red pepper flakes
  • 4 cups tomatoes, diced
  • 6 ounces tomato paste (1 can)
  • 200 grams dry white rice (1 cup dry regular long-grain)
  • 1/2 teaspoon salt
  • 1 tablespoon butter
  • 1 tablespoon parley, finely chopped
  • 1 tablespoon Parmesan cheese
  • 2 cups water
  • 18 ounces artichoke hearts, frozen, quartered (1 package)
  • 1 cup black kalamata olives (pitted)

How to Make

  • Step 1: Cover the bottom of a slow cooker with olive oil. Season chicken with salt and pepper. Mix chicken, sausage, bell pepper, onions, garlic, oregano, pepper flakes and tomatoes in slow cooker. Cover; cook on Low heat setting for 6 to 8 hours.

  • Step 2: Halve and hour before serving, stir artichoke hearts and olives into chicken mixture.

  • Step 3: About 25 minutes before serving, cook rice in 2 cups of salted water or as directed on package. Drain and season with butter, parsley and Parmesan cheese.

  • Step 4: Serve chicken over rice.
