Step 1: Boil the potato's until tender, set aside and & cool.
Step 2: Place potatoes in bowl, add the milk and butter and mash with a fork.
Step 3: Mix in the tuna, onion, parsley, tomato paste, egg and breadcrumbs.
Step 4: Shape into patties and place in the fridge for 1/2 hour.
Step 5: Remove patties from fridge.
Step 6: Heat oil in a large frying pan and cook until golden and crisp on both sides.
Step 7: Drain on absorbent paper.
Step 8: NOTE: I spray my patties with oil and bake in an oven for 20 minutes or until browned, turning half way through cooking.
