Step 1: Melt butter over low heat in a pot.
Step 2: Add flour and stir until smooth.
Step 3: Add half of the meat stock slowly while constantly stirring
Step 4: Add rest of the stock with vinegar and boil slowly, while constantly stirring
Step 5: Add pepper and salt.
Step 6: Add sherry at the very end, just before removing from heat.
Step 7: Remove from heat, allow gravy to cool for 4-5 minutes while stirring constantly.
