Step 1: Heat the butter and the olive oil in a frying pan. Stir in the pepper and cook for a couple of minutes, at low to medium heat.
Step 2: Add the green onions, tomatoes, red pepper flakes, and oregano; mix well.
Step 3: Crack the eggs in a bowl and beat. Add the feta cheese, combine well.
Step 4: Stir in the egg mixture to the frying pan and stir well.
Step 5: Scramble the eggs until they are just done, retaining their juice. (Do not overcook!)
Step 6: Season with salt and pepper to taste.
Step 7: Serve hot with additional red pepper flakes offered. Serve with crusty bread. Enjoy!
