The ingredients are:
  • 8 large eggs
  • 1 green bell pepper, finely sliced (use the type of pepper based on your heat preference)
  • 3 green onions, finely sliced
  • 1 1/2 pounds tomatoes, diced (4 medium, finely diced)
  • 1 1/4 teaspoon dried oregano
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 ounces feta cheese (crumbled)
  • 1 to 2 teaspoons red pepper flakes
  • Salt and pepper, to taste

How to Make

  • Step 1: Heat the butter and the olive oil in a frying pan. Stir in the pepper and cook for a couple of minutes, at low to medium heat.

  • Step 2: Add the green onions, tomatoes, red pepper flakes, and oregano; mix well.

  • Step 3: Crack the eggs in a bowl and beat. Add the feta cheese, combine well.

  • Step 4: Stir in the egg mixture to the frying pan and stir well.

  • Step 5: Scramble the eggs until they are just done, retaining their juice. (Do not overcook!)

  • Step 6: Season with salt and pepper to taste.

  • Step 7: Serve hot with additional red pepper flakes offered. Serve with crusty bread. Enjoy!
